Welcome to BILLY MACS

In a perfect storm of one man’s obsession with French patisserie and the total dearth of French pastries in the rural area of northwest North Carolina where he lives, combined with a boatload of free time on his hands following retirement during a worldwide pandemic, BILLY MACS macarons was born.


Bill Colvard, alter ego of Billy Macs, is a self-taught pastry chef (who cringes at the chutzpah of referring to himself as such), but nonetheless, it is true that he taught himself to make macarons, the most finicky of beasts in the classical repertoire of French patisserie.

The menu at BLLY MACS is ever-changing. It varies seasonally, and from day to day depending on which flavors and colors have struck Bill’s fancy on any given day.

Typically, any given week will result in a new flavor or perhaps a reprise of an old flavor. Sometimes, there are two flavors, and a mixed dozen is possible. Holidays present their own assortments.

Christmas/Solstice 2021
Santa’s Red Velvet


Red Velvet Cake summons up memories of Christmases long past. Each Santa macaron is filled with a tiny piece of red velvet cake and a generous dollop of cream cheese frosting.

Christmas Tree Salted Caramel


These Christmas tree-themed macarons are filled with salted (Fleur de sel) caramel and salted caramel French buttercream. No, there’s no connection that we know of between Christmas trees and caramel, other than both are festive and fabulous.

Rudolph’s Pain d’Épices


Literally translated from French, pain d’épices means “spice bread.” French recipes often translate it as “gingerbread.” But there’s no ginger. It’s all about the star anise, cinnamon, honey and orange.

Solstice Midnight Chocolate


Chocolate as dark as the midnight solstice (71% cacao) is transformed by heavy cream into a silky ganache to fill these deeply chocolate macarons, which are then decorated with cacao nibs to further enhance the ultimate chocolate experience.

Pecan Praline


Homemade pecan pralines are combined with caramelized white chocolate ganache and caramel sauce to transubstantiate this Southern favorite into a French delight.

Triple Orange Earl Grey Chocolate

The intrinsically orange flavor of Earl
Grey tea (bestowed by bergamot oranges) is enhanced by Orangello and orange marmalade and mixed with rich, milk chocolate to create this
sophisticated flavor.

Billy Macs accepts all major credit cards, cash, check, Venmo, and Cashapp.

All orders are hand-delivered, and purchasers must accept delivery within the delivery area of the Greater Elkin-Jonesville, NC, metropolitan area, Mount Airy, NC, or Winston-Salem, NC. Elkin-Jonesville area deliveries are made daily. Mount Airy and Winston-Salem deliveries are made weekly.

Shipping may be available in the future but at present is not an option.
